Smoky Margarita Crema
1/2 cup sour cream
1 lime, halved
1 orange, halved
Pinch Don Sazon Taco Truck Carne Asada Seasoning
1 teaspoon honey
Spicy Queso
1 1/2 cups white American cheese, chopped (about 6 oz)
1/3 – 1/2 cup milk or half & half
1 tablespoon diced green chilies
2 tablespoons chopped jalapeños
1 teaspoon Don Sazon Taco Truck Carne Asada Seasoning
Carne Asada
1 pound flank or skirt steak
1–2 tablespoons Don Sazon Taco Truck Carne Asada Seasoning
1 tablespoon neutral oil
Fries
1 (24–28 oz) bag frozen fries
1–2 tablespoons Don Sazon Taco Truck Carne Asada Seasoning
Grill the citrus + build the crema
Heat a grill (or grill pan) over medium-high heat. Place 1/2 lime and 1/2 orange, cut-side down, and cook until lightly charred.
Squeeze the grilled lime half and grilled orange half into a bowl with the sour cream. Add the seasoning and honey, and stir until smooth.
Finish with a squeeze of the remaining fresh lime half for brightness. Set aside.
Make the queso
In a small saucepan over low heat, combine the cheese and milk. Whisk until melted and smooth and then stir in the green chiles, jalapeños, and seasoning. Keep warm over low heat (using more liquid as needed to thin).
Cook the steak
Pat the steak dry with paper towels, and then rub all over with seasoning.
Heat the oil in a cast iron (either on the stove or on the grill) between medium-high and high heat. Sear the steak 3–5 minutes per side, or until desired doneness.
When the steak comes off: Remove the pan from heat and the immediately squeeze the remaining grilled orange half into the hot pan to deglaze, scraping up all the flavor.
Pour those juices over the steak while it rests for 5–10 minutes.
Cook + season the fries
Cook fries according to package instructions until golden and crispy (or make from scratch). Transfer to a large bowl and immediately toss with seasoning.
Assemble
Spread the fries onto a large platter. Top with the warm queso and steak. Drizzle with the smoky margarita crema (serving the extra alongside) and finish with toppings like pico, radishes, and guacamole.
